If there’s one thing you should know about me, it’s that I’ll never say no to a beautiful hotel. Auberge properties are firmly at the top of my list — especially my beloved Stanly Ranch in Napa Valley. But my heart? It belongs to boutique stays. The kind of places where every stone wall and olive tree feels like it’s been there for centuries, where breakfast is served in a sunny courtyard, and where the staff greet you like old friends.
Puglia — tucked into the heel of Italy’s boot — is filled with exactly that. The region’s most iconic accommodation style is the masseria: a centuries-old fortified farmhouse, once the backbone of rural agricultural life, now transformed into some of the most atmospheric boutique hotels in all of Italy. Think arched stone doorways, bougainvillea-draped courtyards, ancient olive groves, and an unhurried pace that makes the rest of the world feel very, very far away. They range from intimate six-room retreats to sprawling resorts, but the best ones share the same quality: soul.
When Max and I planned our destination wedding and honeymoon in Puglia, I became a little obsessed with the options — there are that many worth knowing about. I’ve previously shared the three properties we actually stayed in, but this post is for the broader list: the boutique hotels and masserie that caught my eye during planning, made it onto my “next time” list, and — in one very special case — became the backdrop for the most beautiful day of my life.
A few things worth knowing before you book: Puglia’s high season runs from June through August, and the most sought-after masserie fill up fast — Don Ferrante, for instance, was fully booked when we looked. If you have your heart set on a specific property, booking three to six months in advance is not excessive. The hotels below span the coastline and countryside from Fasano in the north down to Otranto in the south, so I’ve noted the area for each to help you plan where to base yourself. Borgo Egnazia – Savelletri di Fasano
Best for: The ultimate Puglia splurge — couples, special occasions, or anyone who wants five-star resort amenities with genuine Apulian character.
If you’re looking for the ultimate Apulian luxury experience, Borgo Egnazia is in a category of its own. Designed to resemble a traditional village, its winding cobblestone paths, creamy stone walls, and hidden courtyards make you feel like you’ve stepped into another world entirely — one where time moves slowly and every detail has been considered. The scale is impressive, but it’s the texture and warmth of the place that keep it from feeling like a resort in the conventional sense.
This is where Hollywood celebrities vacation in Puglia (fun fact: Justin Timberlake and Jessica Biel got married here back in 2012), and where service feels both polished and genuinely personal. The property is home to multiple restaurants, including the Michelin-starred Due Camini, a world-class spa that draws heavily on local ingredients and ancient Apulian traditions, and pools scattered throughout the grounds. The beach club is the kind you don’t want to leave. It’s the sort of place where you could go from morning yoga to a long lunch to a late afternoon on the water without ever glancing at your watch — and feel completely at peace with that.
While it’s far larger than most boutique stays in Puglia, Borgo Egnazia somehow still captures that soulful, rooted sense of place that makes this region so special. Just with an extra dose of glamour, and then some.
Masseria Amastuola Wine Resort – Crispiano
Best for: Wine lovers and those who want a romantic, rural escape with a working vineyard on their doorstep.
Wine lovers, this one’s for you. Masseria Amastuola is surrounded by one of Puglia’s most beautiful working vineyards — the kind where rows of vines stretch out toward the horizon, and the air carries the faint sweetness of ripening grapes. It was actually one of the properties we seriously considered for our destination wedding, which tells you something about how romantic and visually stunning the setting is.
The masseria itself combines rustic authenticity with modern comfort, offering spacious rooms that feel both grounded and serene. Wine tastings and vineyard tours are woven naturally into the guest experience, and the on-site restaurant pairs local Puglian dishes with the estate’s own vintages — Primitivo, Negroamaro, and more, all grown just outside your window. Mornings here begin with unreal views over the vines, and evenings end the way evenings in Puglia should: slowly, with a glass of something good and no particular reason to hurry.

Best for: Couples seeking the quintessential masseria experience — history, bougainvillea, a private beach club, and enough beauty to make you never want to leave.
This is the one that got away on our trip — and it remains at the very top of my “next time” list. Masseria Calderisi is set in Savelletri di Fasano, one of the most coveted pockets of the Puglia coastline, and from everything I researched during planning, it’s the kind of property that ruins you for other hotels in the best possible way. Centuries-old stone walls wrapped in bougainvillea, interiors that feel effortlessly chic without trying too hard, and an atmosphere that invites you to slow down the moment you arrive.
The property strikes a balance that’s hard to find — intimate enough to feel private, but with communal spaces that draw you out of your room and into long, lingering afternoons. Suites open directly onto sunny patios or gardens, and the pool area is framed by citrus trees that make the whole scene feel like it was lifted from a film set. Then there’s Calderisi Mare, the property’s private beach club, which feels like a natural extension of the masseria itself — refined, relaxed, and designed to make a day at the sea feel completely effortless.
I haven’t stayed here yet, but I’m already confident it’s the sort of place where you could spend an entire week without once feeling the urge to leave the grounds. And when I do finally get back to Puglia, this is where I’ll be. I’m already counting down.
Canne Bianche Lifestyle & Hotel – Torre Canne
Best for: Beach seekers who don’t want to sacrifice style — the Adriatic is literally at your doorstep.
If waking up to the sound of the sea is non-negotiable for you, Canne Bianche is the answer. This boutique resort sits right on the Adriatic in Torre Canne, which means you’re not just near the water — you’re at it. It’s a rarer find in Puglia than you might expect, where most of the celebrated masserie are set inland among the olive groves, making Canne Bianche’s coastal position genuinely special.
The rooms are bright and airy, decorated in soft coastal tones, with a light-filled, unhurried atmosphere that immediately eases your shoulders. Most have private terraces, and the idea of morning coffee with an Adriatic view is about as good as it sounds. Palm trees and loungers surround the pool, and the spa offers treatments designed around genuine relaxation rather than the perfunctory wellness menu you find at larger hotels. Dining is a real highlight here — seasonal menus that draw from both land and sea, which in Puglia means exceptional produce, fresh-caught fish, and the kind of honest, ingredient-led cooking that makes you want to stay for one more course. One more glass. One more evening.

Don Ferrante Dimora di Charme – Monopoli
Best for: Architecture lovers and old-town romantics — staying here puts you inside the city walls, with sea views and Monopoli’s charming streets on your doorstep.
Don Ferrante has a setting that almost doesn’t feel real. Perched directly on the ancient city walls of Monopoli, it offers front-row views of the Adriatic from a historic stone structure that feels as though it grew out of the town itself rather than being built into it. The interiors are refined and romantic — think warm stone, candlelit alcoves, and the kind of quiet luxury that doesn’t announce itself loudly.
The rooms are cozy yet genuinely luxurious, many with balconies overlooking the sea. Breakfast is served on a terrace where you can watch fishing boats drift in and out of the harbor below — one of those unhurried morning rituals that ends up being one of your favorite memories of a trip. In the evenings, stepping out into Monopoli’s old town feels like stepping into a different century: narrow cobblestone streets, wine bars tucked into ancient doorways, seafood restaurants where the catch of the day is actually the catch of the day.

Masseria Grieco – Ostuni (Our Wedding Venue)
Best for: Destination weddings, milestone celebrations, and anyone who wants to feel like a guest at one of the most beautiful properties in Puglia.
Masseria Grieco is where our wedding unfolded — and because of that, it will forever hold a piece of my heart that no other place quite can. Set in the rolling countryside just outside Ostuni, the property is a storybook of Puglia’s most iconic elements: stone archways worn smooth by centuries, cobblestone courtyards where the sound of footsteps echoes just so, and incredible views of olive groves that stretch toward the horizon in every direction. It is, without question, one of the most beautiful places I have ever been.
Every corner feels like a photograph waiting to be taken. The weathered stone. The central courtyard where we gathered with our family and friends for the most significant day of our lives. The long tables set for a wedding dinner under an open sky, candles everywhere, the air still warm and faintly fragrant. The interiors are exactly right — authentic to the masseria’s history but updated with genuine comfort, so the suites feel both storied and welcoming. It’s the balance that the very best boutique properties manage, and Grieco manages it beautifully.
And then there’s the light. The way the late afternoon sun hits the pale stone and turns it gold — there’s genuinely nothing like it. Even now, looking at the photos, it stops me in my tracks the way it first did on my wedding venue search. The way it did when I was physically there. It’s a place that feels both grand and intimate, both ancient and alive, and I cannot imagine having celebrated the beginning of our marriage anywhere else on earth.
Masseria Le Torri – Polignano a Mare
Best for: Couples wanting an intimate, unhurried retreat near Polignano a Mare — small enough to feel private, beautiful enough to fill an entire camera roll.
Masseria Le Torri is a whitewashed dream tucked just minutes from the Adriatic Sea, near Polignano a Mare. Surrounded by citrus trees and ancient olive groves, it’s one of those properties where the setting does something to you the moment you arrive — the air is different, the quiet is dreamy, and mornings begin with nothing but birdsong and the scent of freshly baked pastries drifting from the kitchen.
The masseria has just a handful of rooms and suites, each one designed with an effortless elegance that layers rustic detail with genuine refinement. Arched stone ceilings, carved wooden doors, handmade ceramics, and private patios where espresso in the morning and a spritz in the afternoon feel equally perfect. The courtyard is the soul of the property — a serene, sun-warmed space where al fresco dinners linger long past the point of fullness and evenings end with local wine and no particular agenda. It’s the kind of atmosphere that makes you reach for your camera constantly and yet also makes you want to simply sit, look, and let it be.
We stayed here during our wedding week, and it was exactly what we needed — a place to pause, breathe, and absorb everything before the festivities began. There’s a particular stillness to Le Torri that makes the whole world feel slower and more generous. It’s the kind of place that follows you home.
Masseria Moroseta – Ostuni
Best for: Design-forward travelers, architecture enthusiasts, and anyone whose travel inspiration board skews minimal, modern, and beautifully lit.
Masseria Moroseta is the property I think about most often when I picture Puglia — a place that understands both where the region comes from and where it’s going. Possibly because it blends Apulian charm with modernity all too well. This all-white, architecture-forward farmhouse just outside Ostuni is surrounded by 13 hectares of organic olive groves, and the contrast it creates — stark, modern lines against centuries-old landscape — is one of the most visually striking things in all of southern Italy. Serene and cinematic, to say the least.
With only six rooms, it functions more like a private retreat than a hotel, and the level of thought that goes into every detail reflects that. Polished concrete floors, handwoven textiles, sunlight cutting through arched doorways at just the right angle — it’s the kind of interior that makes you want to wake up early just to watch the light change. The chef-led Moroseta Kitchen is something of a legend in its own right: seasonal, hyper-local ingredients turned into unforgettable communal meals served at a long farmhouse table that encourages exactly the kind of slow, generous conversation that travel is supposed to produce. And the kitchen is open to non-guests — you can book a reservation even if you’re not staying, though availability is famously difficult to come by.
Then there are Brando and Angelina, the English bulldogs who roam the grounds as if they own them — which, to be fair, they might. Moroseta was entirely booked out during our trip, so my meeting with them is still pending. I will be back to fix that. Masseria Santo Scalone – Ostuni
Best for: Honeymooners or anyone who needs a genuinely peaceful chapter of a longer Italian trip.
Masseria Santo Scalone was the first chapter of our honeymoon — and what a chapter to begin with. Tucked into the Ostuni countryside not far from Carovigno, this beautifully restored farmhouse is the kind of place that immediately signals you’re somewhere special. Lush gardens frame a sparkling pool. Terraces are shaded by centuries-old olive trees. The whole property has that quality particular to the very best masserie, where the landscape and the architecture feel completely inseparable, as though one couldn’t exist without the other.
The interiors are warm and artistic — a mix of soft neutrals, gorgeous pops of color, and unexpected prints that create an atmosphere more like someone’s deeply personal home than a hotel. Our mornings began with leisurely breakfasts in the breakfast room, which is genuinely one of the most beautiful rooms I’ve ever eaten in. Afternoons were slow by design: the pool, the restaurant, a book, a spritz. The kind of day where you look up, and somehow it’s already golden hour, and you’re not remotely sorry.
Evenings at Santo Scalone were my favorite. The air still warm from the day, a light breeze carrying the scent of the garden, wine in hand, and nowhere to be. After days of wedding celebrations surrounded by everyone we love, these were our first truly quiet moments as newlyweds — and I’m so grateful we spent them here. It set the tone for everything that followed.
Masseria Torre Coccaro – Fasano
Best for: Travelers who want five-star luxury without sacrificing authenticity — history, spa, private beach club, and genuinely soulful atmosphere all in one.
Masseria Torre Coccaro is one of Puglia’s most celebrated masserie for good reason — a 16th-century fortified farmhouse turned five-star retreat that manages to feel simultaneously grand and genuinely intimate. Set just minutes from the Adriatic near Fasano, the property unfolds like a private home on lots of land: sprawling grounds, hidden courtyards that reveal themselves slowly, a pool nestled into an ancient orchard. You arrive, and the outside world simply fades into the distance.
The rooms are rustic in the most refined sense of the word — vaulted ceilings, stone fireplaces, antique furnishings worn beautifully by time. Several suites have private plunge pools or terraces draped in jasmine and bougainvillea, which I think about more often than I’d care to admit (and will experience one day). The atmosphere throughout is luxurious without being stiff — there’s a warmth to the place, a quality of genuine hospitality, that keeps it firmly in masseria territory rather than slipping into the basic luxury of an international resort.
The range of experiences on offer is what truly sets Torre Coccaro apart. Guests can take a cooking class in the original ancient kitchen, spend a morning in the Aveda spa set into a natural cave — one of the more extraordinary spa settings I’ve come across anywhere — or head to the private beach club for a day of time spent by the water and chic sun loungers. The fine dining restaurant pulls from local producers and the surrounding landscape, which in this corner of Puglia means exceptional raw ingredients handled with real skill. For travelers who want five-star service without surrendering the soulful, deeply rooted feeling that makes Puglia so distinct, Torre Coccaro is the answer.
Paragon 700 Boutique Hotel & Spa
Best for: Design-obsessed travelers who want something truly unlike anywhere else in Puglia — bold, theatrical, and utterly memorable.
Paragon 700 is unlike anywhere else in Puglia, which is exactly what makes it so compelling. This restored 18th-century palazzo sits right in the heart of Ostuni’s historic center, painted a bold terracotta red that makes it unmissable against the White City’s famous bleached facades. It’s a deliberate, confident design choice, and it sets the tone for everything inside: no two rooms are alike, each filled with carefully curated antiques, rich colors, and bespoke details that reward slow, attentive looking. This is a hotel with a genuine point of view.
The underground spa is one of the more extraordinary hotel amenities I’ve seen in a long time — a completely different world of vaulted stone chambers, candlelight, and a hydromassage pool that feels genuinely like a secret. The restaurant serves inventive, locally inspired dishes that reflect the best of Puglia’s seasonal spread, and the garden — shaded, tranquil, with a pool and daybeds designed for serious relaxation — provides a serene change to the energy of the old town just outside the door. It’s a rare combination: a stay that places you at the center of things while also giving you every reason to stay in.
I wished we’d had time to stay here on our trip, and that feeling has only grown since. If you’re staying in or around Ostuni and want something genuinely different — design-forward, historically rich, and memorable in the way that only truly individual hotels can be — Paragon 700 belongs at the top of your list.
Truth be told, our trip never ventured much further south than Lecce, which means the deeper stretches of Salento are already calling me back. There’s something about this quieter, more sun-bleached corner of Puglia that feels like it deserves a trip of its own: fewer crowds, longer coastlines, and the kind of slow pace that makes even a seasoned Puglia visitor feel like they’re discovering something new. These properties are what I’d be choosing from.
Masseria Montelauro – Otranto
Best for: Travelers who want to venture further south and experience a quieter, more off-the-beaten-path side of Puglia.
Further south, near Otranto, Masseria Montelauro belongs to a quieter, less-traveled version of Puglia — the one that rewards the travelers who venture beyond the well-worn path between Ostuni and Polignano. This former monastery turned masseria sits among fig trees and ancient olive groves, with a large pool and shaded terraces that seem purpose-built for long, unhurried afternoons. The pace here is genuinely slow, in the best possible way.
The rooms are rustic and elegant in equal measure — whitewashed walls, antique furniture, the kind of interiors that feel curated by someone with both taste and genuine affection for the place. Breakfast is served in a garden full of flowers, and from what I’ve seen, it looks every bit as beautiful as it sounds. There’s a convent-like serenity to Montelauro that I find incredibly appealing — history layered into every stone, a setting that inspires reflection rather than activity, and enough space and quiet to actually hear yourself think.
If your ideal Puglia trip involves discovering the region at your own pace — exploring the Baroque streets of Lecce, swimming in the crystal clear waters of the Salento coast, lingering over long lunches with no schedule — Montelauro is a genuinely perfect base. It’s the kind of find that feels like a secret worth keeping.
Palazzo Presta – Gallipoli
Best for: Design-obsessed travelers who want to stay inside Gallipoli’s old town — steps from the sea, with a rooftop that earns its sunset reputation.
Palazzo Presta is one of those places that surprises you the moment you walk through the door. Tucked inside a restored 17th-century palazzo in the warren-like historic center of Gallipoli — a small island city connected to the mainland by a walkable bridge — this four-star boutique hotel is packed with personality in the best possible way. It was brought to life by a Salento couple whose years of globe-trotting informed every corner: each of the thirteen rooms draws from a different cultural inspiration, from Morocco to Japan, layered over the original ceilings and original cement tile floors that give the building its bones.
